  • 3 eggs, separated

  • 2 tbsp unsweetened cocoa powder

  • 1 pinch of salt

  1. Prepare mascarpone cream:
    Beat egg yolks with half the sugar until pale and creamy. Mix in mascarpone until smooth.

  2. Whip egg whites:
    In another bowl, beat egg whites with salt until stiff peaks form. Add remaining sugar halfway through.

  3. Combine gently:
    Fold egg whites into mascarpone mix slowly until fully combined.

  4. Assemble layers:
    Dip ladyfingers quickly in espresso (and liqueur if using). Layer in a dish: cookies, cream, repeat.

  5. Chill & dust:
    Refrigerate for at least 4 hours. Dust generously with cocoa powder before serving.
