For the panna cotta:

1 tsp vanilla extract

2 ½ tsp powdered gelatin

For the berry sauce:

1 cup mixed berries (fresh or frozen)

Bloom the gelatin:
In a small bowl, sprinkle gelatin over cold water. Let sit 5–10 min. -
Heat cream:
In a saucepan, heat cream, sugar, and vanilla until hot (but not boiling). Remove from heat, stir in bloomed gelatin until fully dissolved. -
Pour and chill:
Divide into ramekins or glasses. Chill in fridge for at least 4 hours, or until set. -
Make the berry sauce:
Cook berries, sugar, and lemon juice in a pan until thickened (~5 min). Cool before serving. -
Serve:
Unmold panna cotta (optional) and spoon berry sauce on top. Garnish with mint if desired.
