In another bowl, beat egg whites with salt until stiff peaks form. Add remaining sugar halfway through. -

Fold egg whites into mascarpone mix slowly until fully combined. -
Assemble layers:
Dip ladyfingers quickly in espresso (and liqueur if using). Layer in a dish: cookies, cream, repeat. -
Chill & dust:
